The Venue:

Mille Vini, a thousand wines in Italian, is one of Sydney's most-loved wine bars having opened in 2005 and under new management in 2015. Located within an 1849 heritage-listed stonemason's workshop on busy Crown Street, Mille Vini celebrates food and wine with a European influenced menu and Italian themed wine list accompanied with personal yet efficient service

The Role:

We are looking for a Sous Chef to join the team and assist the Head Chef in leadership and innovation in bringing the best food to our guests. You will be designing unique courses that take inspiration from Italy, Spain & France that perfectly compliment our wine list. Working within an open kitchen, you'll have the opportunity to interact with our customers and put your stamp on the food that is presented to our guests.

Your duties will include;

  • Working with Head Chef for menu development
  • Food preparation and presentation
  • Assist with the running of service working together with other kitchen members
  • Ensuring food costs and wages are meeting allocated budgets
  • Ensuring Kitchen Management Standards are being met and adhered to by all staff
  • Maintain a high level of cleanliness in both the kitchen and venue.

The right candidate for the position will have:

  • Minimum 2 years' experience in a similar role or Senior CDP position
  • A very positive and energetic attitude with a real "can do" approach to their work
  • Be passionate about the food industry and have a creative flair for new dishes
  • Have a great personality and attitude towards customers and not be afraid to engage
  • Be a great team player and supportive of culture of a small team environment
  • Excellent communication and leadership skills
  • Previous experience in management of stock, ordering and budgets
  • Experience with Italian cuisine desired, although not essential.
